Make your sweet potato your vessel! Load it up with protein, veggies and flavors!


Ingredients

  • Cooked sweet potato

  • Garlicky chickpeas

  • Sprouts / Microgreens

  • Protein (tuna or chicken or eggs)

  • TJ’s vegan pesto

Instructions

  • Slice open sweet potato.

  • Fill with chickpeas, greens, protein and top with vegan pesto
